Chocolate Brownies

Who doesn’t love a chocolate brownie?  I’ve tried many brownies from shops, cafes, coffee shops but never really found one I like.  They are either to dry like a biscuit or to dense.  I’ve played around at home with recipes too and have found I don’t like gooey ones.  This recipe is for a moist brownie but if you want them gooey reduce the cooking time by 5 minutes and you will get that uncooked gooey middle a lot of people love.

You will need:

200g of butter

200g of chocolate (I use a mix of plain and milk)

1 tablespoon of cocoa powder

4 eggs

100g of plain flour 

1/2 teaspoon of vanilla extract

1/4 teaspoon of salt


1.Preheat the oven to 200c, 180c if fan assisted, 360f or gas mark 5 and line a cake pan with parchment paper.  Depending on how deep you want your brownies or gooey depends on size of pan you use

2.Melt the butter and chocolate over a pan of hot water on the hob or you can use a double boiler.  You can use the microwave to using very short 10 second burst and stirring well between each one.   Make sure all lumps and gone and you end up with glossy mixture.  Then leave to slightly cool while you prepare the rest of the mixture


3. Using an electric whisk or hand whisk beat the eggs and sugar until well combined and almost white in colour then add the vanilla extract


4.Add the melted chocolate, flour, cocoa powder and salt to the eggs and stir well till you get a smooth batter


5. Pour the batter into the  lined cake tin making sure all edges are filled and the batter is level


6. Add to the over for 25 to 30 minutes.  If you like your mixture more gooey and melt in the middle check after 20.   The top should be cracking and the middle how I like it set.  Using a toothpick it should come out clean.  Again if you like it gooey 20 minutes should be enough cooking time



7. Turn out onto a cooling rack.  Then cut and serve.  My recipe make approx 12 again depending on the size of tin you choose


8. Serve as they are or I find they are delicious with vanilla ice cream or a drizzle of cream
